- 4 about 320g baby eggplants halved lengthways

- combine water stock and 2 tablespoons of the soy sauce in a frying pan over high heat bring to boil and cook for 2 minutes set aside
- divide shallots and carrot into four bundles place a bundle on the short end of each schnitzel roll up to enclose filling place beef rolls seam side down in hot stock mixture cook over medium heat turning once for 6 minutes or until cooked transfer to a plate and cover with foil add eggplant cut side down to hot stock cook for 4 5 minutes or until just tender
- meanwhile steam bok choy and choy sum over a saucepan of simmering water for 2 3 minutes or until just wilted
- cut beef rolls into 4 slices place eggplant bok choy and choy sum on plates top with beef drizzle with remaining soy sauce
